Lokma are traditional sweet pastries from Istanbul, crispy on the outside and soft on the inside, served warm with a sweet sugar syrup.

Ingredients
- 250 g of flour
- 100 g of sugar
- 100 g of butter
- 1 egg
- 1 packet of yeast
- 1/2 cup of milk
- 1/2 cup of water
- Honey for serving
- Granulated sugar for decoration
Method
- In a bowl, mix the flour, yeast, and sugar.
- In another bowl, mix the butter with the milk and water, then add the egg and mix until you get a homogeneous mixture.
- Combine the flour mixture with the butter and mix until you get a homogeneous dough.
- Cover the dough and let it rise for about 1 hour.
- Divide the dough into small balls and drop them into a pan with a little bit of warm oil.
- Be sure to flip the lokma to ensure they cook evenly on both sides.
- Transfer the lokma to a baking paper and sprinkle with a bit of granulated sugar.
- Serve the lokma warm with a drizzle of honey.
The story
Lokma originated in the Middle East and were introduced to Istanbul during the Ottoman period, becoming a popular dish during festivals and celebrations.
