Ingredients

  • 2 lbs of chicken, cut into pieces
  • 1 kg of soy beans
  • 500 g of pumpkin
  • 500 g of potatoes
  • 2 onions
  • 2 cloves of garlic
  • 1 liter of chicken broth
  • 1 tablespoon of red pepper
  • 1 teaspoon of black pepper
  • 1 teaspoon of sugar
  • 1 tablespoon of olive oil
  • Salt to taste

Method

  1. In a large pot, heat the olive oil and sauté the onions and garlic.
  2. Add the chicken and cook until well browned.
  3. Add the broth, soy beans, red pepper, black pepper, and sugar. Bring to a boil.
  4. While the broth is boiling, add the pumpkin and potatoes. Cover and simmer over low heat until the beans and vegetables are tender.
  5. Shred the chicken with a spoon and stir into the locro.
  6. Season to taste with salt if needed. Serve hot.

The story

Locro has its roots in indigenous traditions but has become particularly popular in Tucumán, where it is prepared in various ways using local ingredients.
