Limerick Carrot Cake

A traditional Limerick cake made with carrots, ricotta, and sugar, crunchy and soft.

Ingredients
- 300 g of carrots
- 200 g of sugar
- 150 g of flour
- 100 g of butter
- 2 eggs
- 50 g of ricotta
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of ground cinnamon
- 100 g of crushed almonds
- 100 g of cocoa powder
Method
- Clean the carrots thoroughly, slice them into pieces, and cook them in salty water for 10 minutes.
- In a bowl, mix the butter, sugar, eggs, and vanilla extract until you get a smooth cream.
- Add the flour, baking soda, cinnamon, and crushed almonds, gently mixing them in.
- Add the cooked carrots and ricotta, mixing well to combine all the ingredients.
- Pour the mixture into a baking dish and sprinkle with cocoa powder.
- Preheat the oven to 180°C and bake for 30-35 minutes, checking the doneness with a skewer.
- Let it cool before serving.
