  • 300 g of carrots
  • 200 g of sugar
  • 150 g of flour
  • 100 g of butter
  • 2 eggs
  • 50 g of ricotta
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of ground cinnamon
  • 100 g of crushed almonds
  • 100 g of cocoa powder

Method

  1. Clean the carrots thoroughly, slice them into pieces, and cook them in salty water for 10 minutes.
  2. In a bowl, mix the butter, sugar, eggs, and vanilla extract until you get a smooth cream.
  3. Add the flour, baking soda, cinnamon, and crushed almonds, gently mixing them in.
  4. Add the cooked carrots and ricotta, mixing well to combine all the ingredients.
  5. Pour the mixture into a baking dish and sprinkle with cocoa powder.
  6. Preheat the oven to 180°C and bake for 30-35 minutes, checking the doneness with a skewer.
  7. Let it cool before serving.
