A traditional Ukrainian rice tart with apple marmalade filling, perfect for a winter afternoon dessert.

Ingredients

  • 200g of rice
  • 100g of butter
  • 150ml of milk
  • 100g of sugar
  • 100g of apple marmalade
  • 2 eggs
  • 1 packet of baking powder
  • 1/2 teaspoon of vanilla
  • 100g of flour
  • 100g of chopped almonds
  • 100g of powdered sugar
  • oil for frying

Method

  1. In a bowl, mix the rice with butter, milk, sugar, eggs, baking powder, vanilla, and flour.
  2. Roll out the rice dough on a baking sheet to a thickness of about 1 cm.
  3. In another bowl, mix the apple marmalade with chopped almonds and powdered sugar.
  4. Pour the marmalade mixture over the rice dough and fold the edges in.
  5. Make vertical cuts in the dough to aid in cooking.
  6. Fry the lepivka in hot oil until golden brown.
  7. Drain and serve warm.

Lepivka is a traditional Ukrainian pastry that dates back to the times of the Cossacks, evolving with the influence of various peoples who have inhabited Ukraine.
