Lepivka
A traditional Ukrainian rice tart with apple marmalade filling, perfect for a winter afternoon dessert.

Ingredients
- 200g of rice
- 100g of butter
- 150ml of milk
- 100g of sugar
- 100g of apple marmalade
- 2 eggs
- 1 packet of baking powder
- 1/2 teaspoon of vanilla
- 100g of flour
- 100g of chopped almonds
- 100g of powdered sugar
- oil for frying
Method
- In a bowl, mix the rice with butter, milk, sugar, eggs, baking powder, vanilla, and flour.
- Roll out the rice dough on a baking sheet to a thickness of about 1 cm.
- In another bowl, mix the apple marmalade with chopped almonds and powdered sugar.
- Pour the marmalade mixture over the rice dough and fold the edges in.
- Make vertical cuts in the dough to aid in cooking.
- Fry the lepivka in hot oil until golden brown.
- Drain and serve warm.
