Ingredients

  • 200 g of lentils
  • 100 g of smoked bacon
  • 2 eggs
  • 1 onion
  • 100 g of butter
  • 50 g of flour
  • Salt and pepper to taste
  • 1 pinch of nutmeg
  • 100 g of grated cheese
  • 1 loaf of bread
  • oil for frying

Method

  1. Rinse and boil the lentils for 10-15 minutes, then cool them under cold water.
  2. Fry the lentils in a pan with a bit of butter until they become crispy.
  3. In a bowl, mix the eggs, oil, nutmeg, salt, and pepper.
  4. Fry the smoked bacon in a pan, then add the chopped onion and cook for a few minutes.
  5. Add the flour and stir well to form a dough.
  6. Roll out the dough on the cooking surface and spread the crispy lentils on top.
  7. Place the preparation in a preheated oven at 180°C for 15-20 minutes.
  8. While the Lenzilahm is cooking, cut the bread into cubes and fry in oil until golden.
  9. Once cooked, cut the Lenzilahm into pieces and serve hot, accompanied by the bread cubes.

Lenzilahm is a traditional alpine dish that has gained particular popularity in St. Gallen, where the recipe has been adapted to local tastes.
