A classic of St. Gallen cuisine, Lenzilahm is a crunchy and flavorful lentil tart.

Ingredients
- 200 g of lentils
- 100 g of smoked bacon
- 2 eggs
- 1 onion
- 100 g of butter
- 50 g of flour
- Salt and pepper to taste
- 1 pinch of nutmeg
- 100 g of grated cheese
- 1 loaf of bread
- oil for frying
Method
- Rinse and boil the lentils for 10-15 minutes, then cool them under cold water.
- Fry the lentils in a pan with a bit of butter until they become crispy.
- In a bowl, mix the eggs, oil, nutmeg, salt, and pepper.
- Fry the smoked bacon in a pan, then add the chopped onion and cook for a few minutes.
- Add the flour and stir well to form a dough.
- Roll out the dough on the cooking surface and spread the crispy lentils on top.
- Place the preparation in a preheated oven at 180°C for 15-20 minutes.
- While the Lenzilahm is cooking, cut the bread into cubes and fry in oil until golden.
- Once cooked, cut the Lenzilahm into pieces and serve hot, accompanied by the bread cubes.
The story
Lenzilahm is a traditional alpine dish that has gained particular popularity in St. Gallen, where the recipe has been adapted to local tastes.
