Ingredients

  • 200 g of lentils
  • 200 g of Extremadura chorizo
  • 1 onion
  • 2 garlic cloves
  • 200 ml of olive oil
  • 1 liter of beef broth
  • Salt and pepper to taste
  • 200 ml of red wine
  • 2 sprigs of rosemary
  • 1 bay leaf
  • 100 g of soy beans (optional)

Method

  1. In a large pot, heat the olive oil and sauté the garlic and onion until they turn golden.
  2. Add the chorizo cut into cubes and cook for 5-7 minutes.
  3. Add the beef broth, red wine, rosemary, and bay leaf, bring to a boil.
  4. Add the lentils and soy beans (if using), reduce the heat, and simmer slowly for 30-40 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped parsley.
