A sweet and light fruit tart with a crispy crust, typical of Leipzig.

Ingredients
- 200g of flour
- 100g of sugar
- 100g of butter
- 2 eggs
- 100g of fruit jam
- 500g of berries (e.g., blueberries or raspberries)
- 1 teaspoon of vanilla extract
- 100g of powdered sugar
- 1 whole egg
- 100g of ground almonds
- 100g of pulled sugar
- 100g of butter
Method
- Line a baking dish with parchment paper. In a bowl, mix the flour, sugar, and melted butter. Spread the mixture in the baking dish and make a hole in the center.
- In another bowl, beat the eggs, add the fruit jam, vanilla extract, and berries. Pour this mixture into the baking dish with the crust.
- Beat the whole egg and mix it with the powdered sugar and ground almonds. Distribute this mixture over the tart.
- Melt the butter and pour it over the entire tart. Bake in the oven at 356°F (180°C) for 30-35 minutes.
- Let the dessert cool before serving.
The story
The Leipziger Lerche is a traditional sweet from Leipzig, named after its resemblance to a siskin bird (Lerche in German).
