Ingredients

  • 250g of chopped leek
  • 200ml of olive oil
  • 2 onions
  • 1 liter of beef broth
  • salt and pepper to taste
  • 1 tablespoon of sugar
  • 1 tablespoon of tomato paste
  • 100g of grated cheese

Method

  1. Carefully wash the leek and garlic, then thinly slice them.
  2. In a pot, heat the olive oil and sauté the onions until they turn golden.
  3. Add the leek and garlic slices, sauté for another 5-10 minutes.
  4. Pour in the beef broth and bring to a boil, then reduce heat and simmer for 20-25 minutes.
  5. Use a fork to puree the soup, then add sugar and tomato paste.
  6. Simmer for 5 more minutes, then season with salt and pepper to taste.
  7. Serve hot, garnished with grated cheese pieces.
