Leek Soup
A sweet and nutritious leek soup, a traditional dish from Vienna, Austria.

Ingredients
- 250g of chopped leek
- 200ml of olive oil
- 2 onions
- 1 liter of beef broth
- salt and pepper to taste
- 1 tablespoon of sugar
- 1 tablespoon of tomato paste
- 100g of grated cheese
Method
- Carefully wash the leek and garlic, then thinly slice them.
- In a pot, heat the olive oil and sauté the onions until they turn golden.
- Add the leek and garlic slices, sauté for another 5-10 minutes.
- Pour in the beef broth and bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Use a fork to puree the soup, then add sugar and tomato paste.
- Simmer for 5 more minutes, then season with salt and pepper to taste.
- Serve hot, garnished with grated cheese pieces.
