Lecsó

Ingredients
- 2 kg of tomatoes
- 1 kg of pumpkin
- 500 g of potatoes
- 2 onions
- 2 garlic cloves
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of chili flakes
- 1 tablespoon of sugar
- Salt and pepper to taste
- 1 tablespoon of white wine vinegar
- 1 liter of vegetable broth
Method
- Clean and dice the tomatoes, pumpkin, and potatoes into cubes.
- In a non-stick pan, sauté the garlic and onions in extra virgin olive oil.
- Add the vegetable cubes and sauté for 10-15 minutes.
- Add the chili flakes, sugar, salt, and pepper, and cook for another 5-10 minutes.
- Pour in the vegetable broth, bring to a boil, and simmer on medium heat for 30-40 minutes.
- Add the white wine vinegar and stir well.
- Let it cool down and serve hot.
The story
Lecsó is a traditional Hungarian dish that dates back to the 17th century, when farmers would mix kitchen scraps into one pot to save and nourish themselves better.
