Lamingtons are a traditional Australian sweet, crispy on the outside and soft on the inside, best enjoyed with a cup of tea.

Ingredients
- 200 g of dark chocolate
- 100 ml of milk
- 100 g of sugar
- 12-15 slices of golden sponge cake
- 1 cup of icing sugar
- 2 tablespoons of water
- 1/2 cup of fresh cream
- 1/2 cup of orange juice
- 1/2 cup of powdered sugar
Method
- In a saucepan, mix the dark chocolate, milk, and sugar, bring to a boil and cook for 5 minutes.
- Once cooked, remove from heat and let cool.
- Cut the golden sponge cake into 1 cm thick slices.
- Dip the cake slices in the chocolate, ensuring they are fully coated.
- Spread a layer of icing sugar on a baking paper.
- Place the chocolate-coated cake slices on the baking paper and let them cool.
- For the whipped cream, mix the fresh cream, orange juice, and powdered sugar in a bowl.
- Chill the whipped cream in the refrigerator for a couple of hours before serving.
The story
Lamingtons were invented in 1895 in Brisbane, Queensland, by Lady Lamington, the wife of the governor. The name of the sweet was inspired by her name.
