Ingredients
- 500 g of lamb cut into pieces
- 10 prickly pears
- 2 onions
- 1 tablespoon of olive oil
- 2 cloves of garlic
- 1 teaspoon of red pepper flakes
- 1 lemon
- Caster sugar
- Salt to taste
- 200 ml of beef broth
- 2 mint leaves
- 1 teaspoon of red wine vinegar
Method
- In a pan, heat the olive oil and sauté the finely sliced onions until they become golden brown.
- Add the lamb pieces and cook over medium heat until they are well browned.
- In a bowl, mix the garlic cloves and red pepper flakes, then add the beef broth, lemon juice, sugar, and salt.
- Pour the mixture into the pan with the meat and cook over medium heat for 20-25 minutes, stirring occasionally.
- Clean the prickly pears, cut them in half, and add them to the pan.
- Cook for another 10 minutes until the lamb is fully cooked.
- Finally, add the mint leaves and red wine vinegar, stir well, and serve hot.
