Ingredients

  • 1 kg of lamb
  • 4-5 bay leaves
  • 2 onions
  • 2 tomatoes
  • 1 zucchini
  • 1 pumpkin
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground red pepper
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 liter of meat broth
  • 1 cup of rice

Method

  1. Slice the lamb into thin layers and set aside.
  2. In a pan, sauté the onions and tomatoes in olive oil.
  3. Add the vegetables like zucchini and pumpkin and cook for a few minutes.
  4. Place the lamb over the vegetables, add the meat broth, spices, and salt and pepper to taste.
  5. Cook over medium heat for 30-40 minutes.
  6. In another pan, season the rice with oil and salt, then add some broth and cook on low heat for 15-20 minutes.
  7. Layer the meat and vegetables over the rice in a baking dish, cover with a bay leaf.
  8. Bake for 10-15 minutes in a preheated oven.
