A traditional dish from the Qasim region, lamb makloub is a culinary masterpiece with layers of lamb, vegetables, and spices.

Ingredients
- 1 kg of lamb
- 4-5 bay leaves
- 2 onions
- 2 tomatoes
- 1 zucchini
- 1 pumpkin
- 1 teaspoon of ground ginger
- 1 teaspoon of ground red pepper
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 liter of meat broth
- 1 cup of rice
Method
- Slice the lamb into thin layers and set aside.
- In a pan, sauté the onions and tomatoes in olive oil.
- Add the vegetables like zucchini and pumpkin and cook for a few minutes.
- Place the lamb over the vegetables, add the meat broth, spices, and salt and pepper to taste.
- Cook over medium heat for 30-40 minutes.
- In another pan, season the rice with oil and salt, then add some broth and cook on low heat for 15-20 minutes.
- Layer the meat and vegetables over the rice in a baking dish, cover with a bay leaf.
- Bake for 10-15 minutes in a preheated oven.
