Kvenkaka
Kvenkaka is a traditional fish cake from Northern Norway, crispy and flavorful.

Ingredients
- 200 g of cod, cut into pieces
- 2 eggs
- 100 g of toasted bread, crumbled
- 50 g of Norwegian cheese
- 2 tablespoons of chopped onion
- 1 tablespoon of chopped parsley
- Salt and pepper to taste
- Oil for frying
Method
- In a bowl, mix the fish, eggs, crumbled bread, Norwegian cheese, chopped onion, chopped parsley, and salt and pepper to taste.
- Form small balls with this mixture.
- Fry the fish balls in a pan with a little oil until they are crispy.
- Drain the fish balls on paper towels.
- Serve hot with soy sauce or a bit of chili.
