Ingredients

  • 1 liter of water
  • 200 grams of wheat bread
  • 100 grams of sugar
  • 1 teaspoon of salt
  • 1 teaspoon of beer yeast
  • Pepper corns
  • 1-2 sprigs of fresh mint

Method

  1. Take a piece of wheat bread and blend it until you get a homogeneous mixture.
  2. In a large pot, mix the water, blended bread, sugar, salt, and beer yeast.
  3. Let the mixture rest for 24 hours at room temperature, covered with a clean cloth.
  4. After 24 hours, strain the drink through a multi-layer filter to remove bread residues.
  5. Add the pepper corns and fresh mint sprigs.
  6. Stir well and let it rest in a cool, well-ventilated place for 24 hours.
  7. The kvas is ready to be served, enjoy it cold.

The story

Kvas is a beverage known across Eastern Europe, but it is particularly popular in Ukraine, where it has been made for centuries. Initially prepared as a way to use old bread and preserve it, it later became a distinct drink.
