Kvas is a traditional Russian drink, sweet and light, made from fermented bread.

Ingredients

  • 1 kg of hard wheat bread
  • 2 liters of water
  • 1 tablespoon of sugar
  • 1 tablespoon of honey
  • 1 packet of yeast
  • 1/2 teaspoon of salt
  • 100 ml of warm water

Method

  1. Take the bread and cut it into small pieces, then grind it until you get a fine powder.
  2. In a large pot, mix the water, sugar, honey, salt, and yeast in warm water.
  3. Add the bread powder and stir well to ensure it is fully soaked.
  4. Cover the pot with a cloth and let it ferment for 24 hours in a cool place.
  5. Strain it through a cloth to remove any remaining bread bits.
  6. Decant the Kvas and serve it fresh or store it in the refrigerator for a few days.

The story

Kvas has ancient roots and dates back at least to the 9th century, when it was used as a drink for the poor in Russia.
