Kurbits is a traditional Swedish pumpkin tart, crispy and sweet, perfect for winter.

Ingredients

  • 400g of pumpkins
  • 200g of puff pastry
  • 100g of butter
  • 100g of sugar
  • 100g of flour
  • 1 egg
  • 1 tablespoon of cinnamon powder
  • 1 tablespoon of brown sugar
  • 100g of crushed almonds
  • 100g of icing sugar
  • 1 tablespoon of lemon juice
  • Salt to taste

Method

  1. Cut the pumpkins into small pieces and cook them in a pan with a little butter until they are soft.
  2. Lay the puff pastry sheets over a baking tray or a baking dish.
  3. Pour the cooked pumpkins over the pastry and add sugar, flour, cinnamon, salt, and crushed almonds.
  4. Cover the second half of the baking dish with the remaining pastry, completely covering the pumpkins.
  5. Poke holes in the dish with a fork to allow steam to escape.
  6. Make a cut in the center to create a rim.
  7. Preheat the oven to 180°C and bake for 30-35 minutes.
  8. Let it cool and decorate with icing sugar and lemon juice.
