Ingredients

  • 300g of spinach
  • 200g of leek
  • 100g of mint
  • 100g of thyme
  • 1 egg
  • 1 tablespoon of sugar
  • 1 tablespoon of salt
  • 1 tablespoon of pepper
  • Oil for frying

Method

  1. Wash and chop the fresh herbs and vegetables.
  2. In a bowl, mix the herbs, salt, pepper, and sugar.
  3. Add the egg and mix well.
  4. In a non-stick pan, put some oil and let it heat up.
  5. Pour the mixture into the pan and cook over medium heat until a crust forms.
  6. Cover the pan and cook for 5 minutes.
  7. Place a plate over the pan and flip it quickly to remove the omelette.
  8. Place the plate on top of the pan and flip it over to serve.
