Kopytka
These small, sweet potato and flour dumplings are perfect for an aperitif or dessert.

Ingredients
- 300 g of cooked and mashed potatoes
- 150 g of flour
- 50 g of sugar
- 1/2 teaspoon of cinnamon
- 1 egg
- 1/4 teaspoon of baking powder
- 1 tablespoon of oil
- 100 ml of milk
- icing sugar for decoration
Method
- Beat the egg with milk and oil. Add sugar, cinnamon, and flour with baking powder. Mix well.
- Gradually add the mashed potatoes, mixing until you get a homogeneous dough.
- Shape the dough into small balls about 1 cm in diameter.
- Fry the balls in hot oil, turning them frequently to ensure even cooking.
- Drain and let the kopytka cool.
- Stack the kopytka on a plate and decorate with icing sugar.
