The Koninginneke is a delicious, crunchy and sweet apple tart, originating from the city of Mechelen in Belgium.

Ingredients
- 400 g of flour
- 200 g of butter
- 100 g of sugar
- 1 egg
- 200 g of honey
- 100 g of caster sugar
- 100 g of chopped almonds
- 500 g of cooked apples
- 1 lemon
- 1 pinch of cinnamon
- 1 pinch of powdered sugar
Method
- Prepare the pastry dough by mixing flour, butter, sugar, and egg, forming a ball and letting it rest.
- Line the tart pan with a bit of butter.
- Mix honey, caster sugar, almonds, lemon juice, and cinnamon.
- Core and slice the apples, then sprinkle with lemon juice and add cinnamon.
- Arrange the fruit in the tart pan, then cover with the honey and almond mixture.
- Bake the tart at 180°C for about 30-35 minutes, until the surface is golden.
- Remove the tart from the oven, let it cool, and dust with powdered sugar before serving.
The story
The Koninginneke, an ancient recipe from Mechelen, takes its name from the King of Belgium and is said to have been created to celebrate a royal event.
