Ingredients

  • 1 kg of beef
  • 2 tablespoons of olive oil
  • 2 onions
  • 10-12 garlic cloves
  • 1 teaspoon of red pepper flakes
  • 1 teaspoon of oregano
  • 1 teaspoon of cane sugar
  • Salt to taste
  • 1 lemon
  • Bay leaves
  • 2 garlic cloves
  • Water for the oven

Method

  1. Cut the beef into square pieces and place them in a large bowl.
  2. Mince the onions and garlic, mix with olive oil, cane sugar, red pepper flakes, oregano, salt, and lemon zest, then add the bay leaves and lemon peels.
  3. Mix the onions and garlic with the beef, stirring well.
  4. Cover the bowl with a kitchen towel and let it rest for at least 30 minutes.
  5. Take a large pot and place the beef with its marinade inside. Add water to cover half of the beef.
  6. Cover the pot with a lid and bake in a preheated oven at 150°C for 6-8 hours, adding water if necessary.
  7. Once done, garnish the beef with its vegetables and serve hot.

The story

Originating from the Peloponnese, kleftiko was traditionally prepared by mountain bandits (klephts) who would let the meat cook for days, infusing it with spices and flavors.
