Kkanpunggi (Fan Chicken)
A classic Seoul dish, Kkanpunggi is a roasted chicken dish with a special sauce.

Ingredients
- 4 chickens, 1.5 kg each
- 200 ml of rapeseed oil
- 100 ml of soy sauce
- 50 g of ginger
- 50 g of red pepper flakes
- 50 g of garlic
- 3 tablespoons of salt
- 2 tablespoons of black pepper
- 1 tablespoon of water
- 1 tablespoon of lemon juice
- 2 onions
- 2 cloves of garlic
Method
- Prepare the chicken: clean the chicken thoroughly, remove any residue and pluck it.
- Prepare the marinade: cut the ginger, red pepper flakes, and garlic into small pieces.
- Mix the marinade: put the oil, soy sauce, ginger, red pepper flakes, garlic, salt, pepper, water, lemon juice, garlic, and onions in a pot.
- Marinate the chicken: immerse the chicken in the marinade for about 2 hours.
- Roast the chicken: preheat the oven to 180°C, bake the chicken and cook for 1-1.5 hours.
- Serve: serve the chicken hot with the marinade.
The story
Originating from Seoul, Kkanpunggi was traditionally served in small shops as an affordable and nutritious dish. Today, it is a popular dish not only in Seoul but across the country.
