A classic of Jamaican cuisine, Kingston Souse is a delicious dish made from pork marinated for hours in a rich blend of spices.

Ingredients
- 2 kg of pork, cut into pieces
- 1 liter of water
- 200 g of dried peppers
- 100 g of Cayenne peppers
- 50 g of laurel
- 50 g of onion
- 50 g of garlic
- 50 g of ginger
- 50 g of chili
- 30 g of juniper berries
- 20 g of black pepper
- 10 g of salt
Method
- In a large pot, put the water and pork. Bring to a boil and cook for 10 minutes.
- Add the dried peppers, Cayenne peppers, laurel, garlic, ginger, chili, juniper berries, black pepper, and salt. Stir well.
- Cover the pot and let marinate for at least 2 hours, to allow the flavors to infuse.
- Bring the pot to a boil and cook on medium heat for 2 hours, or until the meat is tender.
- Let the souse cool down and serve cold or warm, accompanied by sweet potatoes or marinated vegetables.
