Ingredients

  • 2 kg of pork, cut into pieces
  • 1 liter of water
  • 200 g of dried peppers
  • 100 g of Cayenne peppers
  • 50 g of laurel
  • 50 g of onion
  • 50 g of garlic
  • 50 g of ginger
  • 50 g of chili
  • 30 g of juniper berries
  • 20 g of black pepper
  • 10 g of salt

Method

  1. In a large pot, put the water and pork. Bring to a boil and cook for 10 minutes.
  2. Add the dried peppers, Cayenne peppers, laurel, garlic, ginger, chili, juniper berries, black pepper, and salt. Stir well.
  3. Cover the pot and let marinate for at least 2 hours, to allow the flavors to infuse.
  4. Bring the pot to a boil and cook on medium heat for 2 hours, or until the meat is tender.
  5. Let the souse cool down and serve cold or warm, accompanied by sweet potatoes or marinated vegetables.
