Ingredients

  • 4 chickens, cut into pieces
  • 100 g of allspice
  • 50 g of pimento
  • 200 g of Scotch bonnet peppers
  • 100 ml of palm oil
  • 100 ml of water
  • 50 g of cane sugar
  • 50 ml of lime juice
  • 50 g of cayenne pepper
  • 20 g of fresh ginger
  • 10 g of black pepper
  • 5 g of red pepper

Method

  1. Chop the allspice and pimento into small pieces and mix with palm oil, water, cane sugar, lime juice, cayenne pepper, ginger, black pepper, and red pepper to make the marinade.
  2. Once the marinade is prepared, add the chicken pieces and mix well.
  3. Let the chicken marinate in the refrigerator for at least 4 hours, or as long as overnight.
  4. Take a banana leaf, place a handful of marinade and a handful of chicken pieces on it.
  5. Fold the banana leaf and cook over low heat for 2-3 hours, checking occasionally to ensure the leaf does not burn.
  6. Serve the jerk chicken with a pepper and lime sauce, or with rice and vegetables.

The story

Kingston Jerk Chicken originated in rural areas of Jamaica, where locals would prepare this spiced meat using local ingredients from hunting scraps. Today, it has become a popular dish and a culinary symbol of the city.
