Kidney dumplings are a traditional dish from La Rioja, known for their rich flavor and exquisite texture.

Ingredients
- 400 g of sheep kidneys
- 300 g of rice flour
- 2 eggs
- 1 onion
- 2 garlic cloves
- 100 g of red bell peppers
- 100 g of carrots
- 100 g of zucchini
- 1 tablespoon of olive oil
- salt and pepper to taste
- 2 basil leaves
Method
- Cut the sheep kidneys into small pieces and cook them in salted water for 15 minutes, then let them cool.
- Mix the rice flour and eggs in a bowl to form a dough.
- Roll out the dough on a work surface and cut it into thin layers with a knife.
- In a pan, sauté the onion and garlic in olive oil, then add the bell peppers, carrots, and zucchini, cook for 10 minutes.
- Lift the pasta layers and fill them with the prepared sauce, then fold the edges to form the dumplings.
- Boil the dumplings in salted water for 5 minutes, then serve with a bit of salt and pepper and basil leaves.
