Ingredients

  • 400 g of sheep kidneys
  • 300 g of rice flour
  • 2 eggs
  • 1 onion
  • 2 garlic cloves
  • 100 g of red bell peppers
  • 100 g of carrots
  • 100 g of zucchini
  • 1 tablespoon of olive oil
  • salt and pepper to taste
  • 2 basil leaves

Method

  1. Cut the sheep kidneys into small pieces and cook them in salted water for 15 minutes, then let them cool.
  2. Mix the rice flour and eggs in a bowl to form a dough.
  3. Roll out the dough on a work surface and cut it into thin layers with a knife.
  4. In a pan, sauté the onion and garlic in olive oil, then add the bell peppers, carrots, and zucchini, cook for 10 minutes.
  5. Lift the pasta layers and fill them with the prepared sauce, then fold the edges to form the dumplings.
  6. Boil the dumplings in salted water for 5 minutes, then serve with a bit of salt and pepper and basil leaves.
  7. Your kidney dumplings are ready to be enjoyed!
