A traditional Lebanese dish, Kibbeh Bil Basaleek Bi Zaytoun combines the crunch of Basaleek with the sweetness of kibbeh and the saltiness of olives.

Ingredients

  • 200 g of kibbeh
  • 100 g of basaleek
  • 100 g of halved olives
  • 2 tablespoons of olive oil
  • 1 tablespoon of apple cider vinegar
  • Salt and pepper to taste
  • 1 bay leaf
  • 1 lemon
  • 1 tablespoon of sugar

Method

  1. Prepare the kibbeh by cutting it into small pieces and set aside.
  2. Slice the onion thinly and sauté it in a little olive oil.
  3. Add the kibbeh pieces and sauté for a few minutes.
  4. Add the apple cider vinegar, salt, pepper, bay leaf, and lemon juice.
  5. Cook for another 5-7 minutes, stirring frequently.
  6. In another pan, cook the basaleek in boiling water for 3-5 minutes.
  7. Drain the basaleek and add it to the kibbeh.
  8. Finally, add the olive pieces and mix well.
  9. Serve hot with a little sugar sprinkled on top.
