Kibbeh Khiyar
A delectable Sidon dish, Kibbeh Khiyar, an ancient recipe that combines the freshness of the cucumber with the crunchiness of the kibbeh.

Ingredients
- 2 cucumbers, thinly sliced
- 500 g beef
- 1 onion
- 1 garlic clove
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon ginger powder
- 1 teaspoon coriander
- Oil for frying
- Kibbeh dough
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
Method
- Slice the cucumbers thinly and set aside.
- In a bowl, mix the beef with the chopped onion, minced garlic, salt, black pepper, ginger, and coriander.
- Prepare the kibbeh following the instructions of the dough.
- Fry the beef in plenty of oil until golden.
- In a separate pan, mix the apple cider vinegar and sugar.
- Place the cucumber slices in the kibbeh, then add the fried beef and sprinkle with the vinegar and sugar mixture.
- Fry the kibbeh with the cucumber slices and beef for about 2-3 minutes until golden.
- Serve hot.
