Kibbeh Ajami
A traditional Sidon dish, Kibbeh Ajami is a crunchy fried pastry filled with meat and rice, topped with fried onions.

Ingredients
- 200 g of beef
- 100 g of rice
- 2 eggs
- 2 onions
- 100 g of flour
- 1 teaspoon of sugar
- 1 teaspoon of salt
- Oil for frying
- Pulverized flour for coating
- Water for battering
Method
- Prepare the Kibbeh Ajami filling by mixing the beef, rice, eggs, salt, sugar, and a bit of water to achieve a not too wet consistency.
- Divide the filling into small portions and form them into balls.
- In a bowl, put the flour and add a bit of water to create a damp flour.
- Dust the meat balls with the damp flour.
- In a separate bowl, dip the flour-dusted balls in water.
- Coat them with the powdered flour for the crust.
- Fry the balls in a large quantity of hot oil, maintaining a constant temperature.
- Drain the balls immediately after frying and serve them hot, garnished with fried onions.
