Khoresht-e Sholeh Zaminie

A sweet and aromatic stew from Kerman, best served warm with bread.

Ingredients
- 400 g of beef
- 2 onions
- 1 zucchini
- 1 green pepper
- 1 red pepper
- 1 tablespoon of sugar
- 2 tablespoons of wine vinegar
- 1 tablespoon of chili powder
- 1 teaspoon of cinnamon powder
- 1 teaspoon of cardamom powder
- 1 teaspoon of ginger powder
- 1 liter of beef broth
- Salt to taste
Method
- Cut the beef into small pieces and add it to a pot with beef broth. Bring to a boil and simmer over medium heat for 1 hour.
- Chop the garlic, onions, green pepper, and red pepper into small pieces.
- Add the chopped onions, green and red peppers to the pot and cook over medium heat for 10 minutes.
- Add the zucchini cut into slices, sugar, wine vinegar, chili powder, cinnamon, cardamom, and ginger. Stir well.
- Simmer over medium heat for 15 minutes, adding water if necessary to prevent the sauce from drying out.
- Turn off the heat and let it cool for 10 minutes. Serve warm with bread.
