Ingredients

  • 200g of basmati rice
  • 200g of ripe mango
  • 2 eggs
  • 50g of shrimp flakes
  • 2 onions
  • 2 tablespoons of coconut oil
  • 1 tablespoon of soy sauce
  • Salt and pepper to taste
  • 1 tablespoon of beef vinegar
  • 1 tablespoon of sugar

Method

  1. Peel and cut the mango into cubes.
  2. Cook the basmati rice according to package instructions.
  3. In a pan, heat the coconut oil and fry the onion and shrimp flakes.
  4. Add the eggs and fry for a couple of minutes.
  5. Add the rice and stir well to combine with the other ingredients.
  6. Add the sugar, beef vinegar, soy sauce, salt, and pepper, and stir well.
  7. Finally, add the mango cubes and gently stir.
