A traditional Jakarta dish, Ketoprak is a delightful mix of marinated and fried vegetables served on a vermicelli string.

Ingredients
- 200g of vermicelli
- 100g of tofu
- 100g of onion
- 50g of carrot
- 50g of celery
- 50g of broccoli
- 30g of bell pepper
- 20g of scallions
- 10g of mint
- 30g of kecap manis (sweet soy sauce)
- 10g of coconut oil
- Salt and pepper to taste
Method
- Rinse the vermicelli and soak it in cold water for 30 minutes, then drain and dry it.
- Cut the tofu into thin strips.
- Wash and cut the vegetables (carrots, celery, broccoli, bell peppers) into small pieces.
- In a bowl, mix the sweet soy sauce with coconut oil and season with salt and pepper to taste.
- Dip the vegetables in the sauce mixture for 15 minutes, then fry them in a pan with the remaining oil.
- Place the vermicelli on a bowl, add the fried vegetables, and garnish with scallions and mint.
- Serve immediately to enjoy the freshness of the dish.
The story
Originating from the Jakarta region, Ketoprak gained popularity in the 1980s as an affordable and healthy snack.
