A traditional Moroccan dish, the kefta tagine is a delightful mix of ground meat simmered slowly in a tomato sauce and spices.

Ingredients

  • 200 g of ground meat (pork, beef or lamb)
  • 1 onion
  • 1 garlic clove
  • 100 ml of olive oil
  • 2 ripe tomatoes
  • 1 tablespoon of vinegar
  • 1 tablespoon of sugar
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of saffron
  • Salt to taste
  • 2 slices of Tuscan bread
  • 1 bay leaf
  • 1 mint leaf

Method

  1. In a bowl, mix the ground meat, minced garlic, chopped onion, olive oil, sugar, black pepper, and salt. Add the saffron and mix well.
  2. Form the kefta tagine, placing each one on a bay leaf.
  3. In a pot, sauté the garlic and chopped onion in olive oil, then add the chopped tomatoes and beef broth.
  4. Cook over medium heat for 20-25 minutes, adding vinegar and salt to taste.
  5. In another bowl, toast the bread and add the mint leaf.
  6. Serve the kefta tagine with the sauce on top and the toasted bread and mint leaf in a bowl.

The story

The kefta tagine has roots in traditional Moroccan cuisine, where sailors would use this preparation to make use of leftover meats for lunch.
