A classic Thai dish, Kai Yang is a grilled chicken dish seasoned with aromatic spices.

Ingredients
- 4 chickens, cut into pieces
- 1 red onion, chopped
- 2 tablespoons of chili powder
- 1 tablespoon of salt
- 1 tablespoon of beef vinegar
- 1 tablespoon of coconut oil
- 1 tablespoon of lemon juice
- 1 tablespoon of cardamom extract
- 1 tablespoon of ginger extract
- 1 tablespoon of garlic extract
- 1 tablespoon of Sichuan pepper extract
- 1 tablespoon of mint extract
Method
- In a bowl, mix the spices, vinegar, coconut oil, lemon juice, cardamom extract, ginger extract, Sichuan pepper extract, and mint extract.
- Add the salt and chili powder, mixing well.
- In another bowl, place the chicken pieces.
- Add the marinade to the chicken pieces, making sure each piece is well coated.
- Let it marinate for at least 30 minutes or overnight if possible.
- Preheat a charcoal grill and grill the chicken for 20-25 minutes, turning frequently to ensure it is well cooked.
- Serve hot, garnished with chopped red onion.
