Kabab Koobideh is a classic Iranian dish, a crispy and flavorful minced meat skewer.

Ingredients
- 400 g of beef or veal (at least 70% fat)
- 1 tablespoon of salt
- 1 tablespoon of pepper
- 2 tablespoons of vinegar
- 2 tablespoons of sugar
- 1 tablespoon of fresh mint, chopped
- 1 tablespoon of fresh parsley, chopped
- 1 tablespoon of sweet onion, chopped
- 40 skewers for the grill
- Oil for frying
- 1 tablespoon of apple cider vinegar (optional)
Method
- Grind the beef or veal with salt, pepper, vinegar, sugar, mint, parsley, onion, and apple cider vinegar (if using).
- Form balls of about 30-35 grams of ground meat.
- Skewer each meat ball on a skewer for the grill.
- Fry the meat balls in a pan with oil, turning frequently to ensure even cooking.
- Grill the meat balls on an open flame for a few minutes, turning to achieve a crispy crust.
- Serve the Kabab Koobideh hot with a yogurt and red onion sauce.
