Ingredients

  • 400 g of beef or veal (at least 70% fat)
  • 1 tablespoon of salt
  • 1 tablespoon of pepper
  • 2 tablespoons of vinegar
  • 2 tablespoons of sugar
  • 1 tablespoon of fresh mint, chopped
  • 1 tablespoon of fresh parsley, chopped
  • 1 tablespoon of sweet onion, chopped
  • 40 skewers for the grill
  • Oil for frying
  • 1 tablespoon of apple cider vinegar (optional)

Method

  1. Grind the beef or veal with salt, pepper, vinegar, sugar, mint, parsley, onion, and apple cider vinegar (if using).
  2. Form balls of about 30-35 grams of ground meat.
  3. Skewer each meat ball on a skewer for the grill.
  4. Fry the meat balls in a pan with oil, turning frequently to ensure even cooking.
  5. Grill the meat balls on an open flame for a few minutes, turning to achieve a crispy crust.
  6. Serve the Kabab Koobideh hot with a yogurt and red onion sauce.
