Jujuy Tamales
A traditional Jujuy dish, tamales are warm and rich, wrapped in banana leaves.

Ingredients
- 2 kg of corn
- 1 liter of chicken broth
- 1/2 kg of beef
- 1 onion
- 1/2 chili pepper
- 1/2 tablespoon of chili powder
- 1/2 tablespoon of salt
- 10 banana leaves
- 10 lotus leaves
- 100 g of butter
- 100 g of sugar
- 100 g of almonds
Method
- In a pot, cook the corn with chicken broth for 2 hours.
- Cut the beef into small pieces and fry it in a pan with oil. Cook on medium heat for 30 minutes.
- Cut the onion and chili pepper into cubes and add them to the beef. Cook for another 15 minutes.
- In a bowl, mix the butter, sugar, and finely chopped almonds.
- In a pan, mix the corn with the meat and vegetables, add the chili powder and salt.
- Wrap the corn with the meat in banana and lotus leaves, tie them well.
- Make the same tamales with corn without meat.
- Boil a pot of water and steam the tamales for 2 hours.
