Johnny Cakes
This traditional Jamaican sweet is crispy on the outside and soft on the inside, perfect for breakfast or a picnic.

Ingredients
- 200 g of flour
- 2 eggs
- 100 ml of milk
- 50 g of sugar
- 1/2 teaspoon of salt
- 2 teaspoons of ground cinnamon
- 100 g of butter
- Oil for frying
Method
- Mix the flour, sugar, salt, and cinnamon in a large bowl.
- In another bowl, beat the eggs and mix in the milk, then add the mixed flour and stir until you get a smooth consistency.
- Melt the butter in a pan and add a bit of oil for frying.
- Let the mixture rest for 15 minutes to allow the ingredients to blend.
- Fry the Johnny Cakes in hot oil, turning them once they are golden on both sides.
- Serve them warm with cream or honey for a touch of sweetness.
The story
Johnny Cakes originated in Jamaica and were brought to the United States during the slavery period, becoming popular among agricultural workers.
