Jibneh Baladi
Jibneh Baladi is a traditional Lebanese cheese, soft and flavored with spices.

Ingredients
- 1 kg of goat milk
- 1/2 cup of salt
- 1 tablespoon of sugar
- 1 tablespoon of vinegar
- 1 tablespoon of anise seeds
- 1 tablespoon of cumin seeds
- 1 tablespoon of black pepper
- 2 liters of water
Method
- In a pot, bring 2 liters of water, salt, and sugar to a boil.
- Add the goat milk and let it cool down.
- In another bowl, mix the vinegar, anise seeds, cumin seeds, and black pepper.
- Once the milk is cool, add the spice mixture and stir well.
- Fill a cheese mold with the mixture and let it dry for at least 24 hours.
- Remove the mold and let the cheese mature for at least a week before eating.
- Serve it in thin slices with bread and olives.

Jibneh Baladi has a long history dating back to ancient times in the Middle East, where it was used as a natural preservative for milk.
