Jibneh Baladi is a traditional Lebanese cheese, soft and flavored with spices.

Ingredients

  • 1 kg of goat milk
  • 1/2 cup of salt
  • 1 tablespoon of sugar
  • 1 tablespoon of vinegar
  • 1 tablespoon of anise seeds
  • 1 tablespoon of cumin seeds
  • 1 tablespoon of black pepper
  • 2 liters of water

Method

  1. In a pot, bring 2 liters of water, salt, and sugar to a boil.
  2. Add the goat milk and let it cool down.
  3. In another bowl, mix the vinegar, anise seeds, cumin seeds, and black pepper.
  4. Once the milk is cool, add the spice mixture and stir well.
  5. Fill a cheese mold with the mixture and let it dry for at least 24 hours.
  6. Remove the mold and let the cheese mature for at least a week before eating.
  7. Serve it in thin slices with bread and olives.

Jibneh Baladi has a long history dating back to ancient times in the Middle East, where it was used as a natural preservative for milk.
