Ingredients

  • 150g of sweet potato noodles
  • 200g of spinach
  • 200g of onions
  • 200g of carrots
  • 2 tablespoons of soybean oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sugar
  • 1/2 red onion
  • 1/2 cup of soy sauce vinegar
  • salt and pepper to taste
  • 1 tablespoon of almond oil
  • 1 egg

Method

  1. Wash the vegetables thoroughly and cut them into small pieces.
  2. Heat the soybean oil in a pan and sauté the scallions and red onion for 2 minutes.
  3. Add the sliced carrots and cook for 5 minutes.
  4. In another pot, cook the sweet potato noodles for 3-4 minutes, then drain them.
  5. Add the cooked vegetables and noodles to the sautéed mixture and season with soy sauce, sugar, soy sauce vinegar, salt, and pepper.
  6. Stir well and cook for another 5 minutes.
  7. In a separate bowl, boil the egg in salted water, then cool it under cold water, crack it, and add it to the dish.
  8. Mix well and serve hot.
