Irish Stew
A traditional and hearty Irish dish made with lamb, potatoes, and onions.

Ingredients
- 500g of lamb, cut into pieces
- 4 potatoes, cubed
- 2 onions, sliced
- 200g of carrots
- 200g of lentils
- 1 liter of beef broth
- 2 tablespoons of salt
- 1 tablespoon of black pepper
- 2 tablespoons of olive oil
- 2 mint leaves
- 2 thyme leaves
Method
- In a large pan, heat the olive oil and sauté the onions until they become golden.
- Add the lamb and cook over medium heat for 5-7 minutes, until it starts to brown.
- Add the carrots, potatoes, and lentils, stirring well.
- Pour in the beef broth and add the salt and black pepper.
- Bring to a boil, reduce the heat, and let it simmer slowly for 1-1.5 hours, or until the lamb is fully cooked.
- Add the mint and thyme leaves, stir, and let it heat up for another minute.
- Serve hot with bread.
