Ingredients

  • 4 zucchinis
  • 1 onion
  • 2 tomatoes
  • 1 red onion
  • 1 white onion
  • 1 tablespoon of sugar
  • 1 teaspoon of red pepper flakes
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of saffron
  • olive oil
  • 150 g of Greek feta cheese

Method

  1. Cut the zucchinis in half lengthwise and remove the seeds.
  2. Sauté the oil with finely chopped garlic and onions.
  3. Add the cubed tomatoes, red onion, and white onion.
  4. Stir well and cook for 10-15 minutes on medium heat.
  5. Add the sugar, saffron, red pepper flakes, salt, and black pepper, stir and cook for another 5 minutes.
  6. Fill the zucchinis with the preparation and drizzle with a bit of olive oil.
  7. Bake in the oven at 180°C for 20-25 minutes.
  8. Serve hot with a slice of Greek feta cheese on top.
