Ilocos Longganis

Ilocos Longganis is a traditional Filipino cured sausage, sweet and robust, often enjoyed with toasted bread.

Ingredients
- 500g of pork meat
- 100g of pancetta
- 1 tablespoon of ground chili
- 1 tablespoon of salt
- 1 tablespoon of sugar
- 1 tablespoon of black pepper
- 2 tablespoons of palm oil
- 200ml of white dry wine
- 200ml of water
- 100g of dried beans
- 100g of onion
- 100g of garlic
Method
- In a pan, cook the pancetta in a bit of palm oil until it melts.
- Add the chopped onion and garlic, sauté for a few minutes.
- Add the chopped pork meat and cook until it melts.
- Add the ground chili, salt, sugar, and black pepper, mix well.
- Pour in the white dry wine and the juice of the dried beans, bring to a boil and simmer for 1 hour.
- In another container, mix the water with salt and the dried beans, cook until they are soft.
- Combine the cooked beans with the meat sauce and cook for another 15 minutes.
- Allow to cool, then form the longganis into sausage casings or freeze in portions.
The story
The Ilocos longganis has historical roots that date back to pre-colonial times when the natives produced this sausage as a means of preserving pork.
