Hunter-style Artichokes

This traditional Ancona dish offers an intense and aromatic taste of hunter-style artichokes.

Ingredients
- 400g artichokes, cleaned and sliced
- 200g pancetta, diced
- 100g red peppers, diced
- 100g onion, sliced
- 200g cucumbers, diced
- 200g tomatoes, diced
- 200g zucchini, diced
- 2 cloves of garlic
- 100g flour
- 500ml of olive oil
- salt and pepper to taste
- 100ml of water
Method
- In a large pan, heat the olive oil and sauté the pancetta until it becomes golden brown.
- Add the garlic and onion, sauté for a few minutes until they become golden brown.
- Add the peppers, cucumbers, tomatoes, and zucchini, sauté for another 5-7 minutes.
- In a bowl, separate the flour and add the water, mixing until you get a light sauce.
- Pour the sauce into the pan with the ingredients, stir well, and add the artichoke pieces.
- Cook on medium heat for 20-25 minutes, stirring occasionally, until the artichokes become tender and the sauce is thickened.
- Season with salt and pepper to taste, serve hot.
