Ingredients

  • 200g of basmati rice
  • 1 red onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 100g of turnip greens, chopped
  • 50g of fresh mint, chopped
  • 50g of fresh basil, chopped
  • 50g of fresh cilantro, chopped
  • 1 lemon, sugar, and water for lemon juice
  • 1 tablespoon of tamarind powder
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil

Method

  1. Cook the rice: boil the basmati rice in salted water for about 15-20 minutes, then cool it under cold water.
  2. Prepare the sauce: mix the lemon juice, tamarind powder, soy sauce, and sesame oil.
  3. In a large bowl, mix the rice with the chopped vegetables and herbs.
  4. Add the prepared sauce and mix well.
  5. Let it sit for at least 30 minutes before serving to allow the flavors to meld.
