Hania's Boureki
A traditional Greek dish, rich in potatoes and cheese, served in soft and crispy layers.

Ingredients
- 400g of potatoes
- 300g of feta cheese
- 200g of filo pastry
- 2 eggs
- 1 tablespoon of sugar
- Salt and pepper to taste
- Oil for frying
Method
- Peel and cut the potatoes into small cubes.
- Boil the potatoes for 15-20 minutes, then drain and let them cool.
- Prepare a sauce by mixing the egg, sugar, salt, and pepper.
- Place a sheet of filo pastry on a work surface, spread a handful of potatoes, a handful of feta cheese, and a tablespoon of the sauce.
- Repeat with the other sheets, forming thin and even layers.
- Place the last sheet of pastry on top, cover the boureki, brush with oil, and fry in a hot fryer.
- Serve hot, accompanied by a mint or parsley sauce.
The story
Hania's boureki emerged in the 17th century when merchants and sailors filled the pastry layers with local ingredients.
