Halawa
A traditional Lebanese sweet made from caramelized cane sugar and soft, best served drizzled over a linen cloth.

Ingredients
- 500 g cane sugar
- 1 liter water
- 1 tablespoon rose water
- 1 tablespoon olive oil
- 1 tablespoon lemon zest
- 100 g crushed almonds
- 100 g crushed pistachios
- 100 g sesame seeds
- 100 g fennel seeds
- 2 mint leaves
- 2 basil leaves
- Linen cloth for serving
Method
- In a pot, mix the cane sugar with water and bring to a boil. Add olive oil and lemon zest.
- Cook on low heat until the sugar has fully caramelized, stirring occasionally to prevent burning.
- Add rose water and stir well.
- Pour the mixture onto a linen cloth and let it cool.
- While it cools, mix the almonds, pistachios, sesame seeds, and fennel seeds.
- Once the mixture has cooled and reached a flexible consistency, spread it on a linen cloth and decorate with the almonds, pistachios, sesame seeds, and fennel seeds.
- Finally, add the mint and basil leaves on top of the mixture.
- Let it rest for at least 2 hours before serving.
