Gougedeen is a traditional Belgian dish, particularly popular in Limburg, combining the crispiness of the chicken skin with the tenderness of the filling.

Ingredients
- 4 chickens, each 1.5 kg
- 800 g cooked ham
- 400 g gruyere cheese
- 200 g raisins
- 1 onion
- 2 garlic cloves
- 100 g butter
- 100 ml white wine
- Salt, pepper
Method
- Prepare the chickens by making a cut in the breast and removing the skin.
- Chop the cooked ham and gruyere cheese, then mix with the raisins, minced garlic, and a tablespoon of butter.
- Fill the chickens with the stuffing and replace the skin over the stuffing.
- Make cuts in the skin to allow the onion to cook through.
- Cook the onion with the garlic and the remaining butter, then baste the chickens with wine and salt.
- Bake the Gougedeen in the oven at 350°F (180°C) for about 1 hour, checking for doneness.
- Serve hot with a sweet and sweet wine.
The story
Gougedeen was created in the 1950s as a way to use less desirable parts of the chicken, and it quickly gained popularity for its crispy exterior and tender interior.
