Gopchang (곱창)
A traditional Korean dish, gopchang is a delectable raw pig's ear, crispy and flavorful.

Ingredients
- 400 g of fresh pig's ears
- 1 tablespoon of salt
- 1 tablespoon of sugar
- 1 tablespoon of soy sauce
- 1 tablespoon of chili sauce
- 2 tablespoons of vegetable oil
- 2 onions
- 2 garlic cloves
- 1 tablespoon of black pepper
- 1 tablespoon of table salt
- 2-3 bay leaves
- 1 teaspoon of chili powder
Method
- Clean and wash the pig's ears, then dry them well.
- In a bowl, mix the salt, sugar, soy sauce, and chili sauce.
- Submerge the pig's ears in the seasoning mixture and let them marinate for at least 2 hours.
- Slice the onions and garlic thinly.
- In a pan, heat the vegetable oil and sauté the onions and garlic for a few minutes.
- Add the pig's ears, black pepper, table salt, bay leaves, and chili powder.
- Cook over medium heat for 10-15 minutes, stirring occasionally, until the ears are crispy.
- Serve the gopchang hot, accompanied by soy sauce and chili sauce as desired.
The story
Gopchang has ancient roots and is said to have been first prepared during the Joseon dynasty as a way to enjoy some of the most delicious dishes without having to cook them.
