Gombo Yaarafi

A traditional Diourbel dish, Gombo Yaarafi is a delicious vegetable stew with a spicy kick from the pepper.

Ingredients
- 200g of red bell peppers
- 200g of green bell peppers
- 200g of zucchini
- 200g of onions
- 100g of yellow bell peppers
- 500g of chickpeas
- 200g of dried tomatoes
- 500ml of vegetable broth
- 2 tablespoons of olive oil
- 1 tablespoon of chili pepper
- Salt and pepper to taste
- 1 tablespoon of white wine vinegar
Method
- Core and dice the red and green bell peppers, zucchini, onions, and yellow bell peppers.
- Fry the bell peppers and onions in a pan with olive oil.
- Add the yellow bell peppers and zucchini, and fry for a few minutes.
- In a casserole, drain the chickpeas and vegetable broth, then add the bell peppers, zucchini, onions, and yellow bell peppers.
- Bring to a boil, reduce heat, and simmer for 20-25 minutes.
- Add the dried tomatoes, chili pepper, salt, and pepper, and cook for another 10 minutes.
- Finally, add the white wine vinegar and mix well.
