Ingredients

  • 200g of red bell peppers
  • 200g of green bell peppers
  • 200g of zucchini
  • 200g of onions
  • 100g of yellow bell peppers
  • 500g of chickpeas
  • 200g of dried tomatoes
  • 500ml of vegetable broth
  • 2 tablespoons of olive oil
  • 1 tablespoon of chili pepper
  • Salt and pepper to taste
  • 1 tablespoon of white wine vinegar

Method

  1. Core and dice the red and green bell peppers, zucchini, onions, and yellow bell peppers.
  2. Fry the bell peppers and onions in a pan with olive oil.
  3. Add the yellow bell peppers and zucchini, and fry for a few minutes.
  4. In a casserole, drain the chickpeas and vegetable broth, then add the bell peppers, zucchini, onions, and yellow bell peppers.
  5. Bring to a boil, reduce heat, and simmer for 20-25 minutes.
  6. Add the dried tomatoes, chili pepper, salt, and pepper, and cook for another 10 minutes.
  7. Finally, add the white wine vinegar and mix well.
