Goat Soup (Kjotsuppe)

A warm and nutritious goat soup from Hedmark, traditionally served in winter.

Ingredients
- 400 g of goat meat
- 2 onions
- 2 carrots
- 2 cucumbers
- 2 garlic cloves
- 1 liter of meat broth
- 1 liter of water
- 2 sage leaves
- 1 thyme leaf
- salt and pepper to taste
- 1 tablespoon of olive oil
- 100 g of vermicelli
Method
- Cut the goat meat into small pieces and set aside.
- In a large pot, sauté the garlic in olive oil.
- Add the onions, carrots, and cucumbers, cut into cubes, and sauté for a few minutes.
- Add the goat meat and meat broth, bring to a boil, and let cook for 1 hour.
- Add the sage and thyme leaves, salt, and pepper, and let cook for another 30 minutes.
- Finally, add the vermicelli and cook for 10 minutes until al dente.
- Serve hot and enjoy your traditional Hedmark goat soup.
