Glarner Zibee

A traditional Glarus appetizer, the Glarner Zibee blends the intense flavor of cheese with the sweet aroma of tobacco.

Ingredients
- 200g of Glarner cheese
- 100g of raw ham
- 10 lettuce leaves
- 100g of grated cheese
- 2 onions
- 100g of toasted bread
- 20g of butter
- 10g of salt
- 5g of pepper
Method
- Slice the Glarner cheese thinly.
- Dice the onions.
- In a pan, sauté the onions in a bit of butter.
- Add the slices of cheese and the grated cheese, mixing well.
- Arrange the lettuce leaves in a baking dish.
- Cover with the cheese mixture.
- Finally, add the raw ham cubes on top of the cheese.
- Bake at 180°C for 15-20 minutes, until the cheese is melted.
- Serve hot, with toasted bread on the side.
The story
The Glarner Zibee has a history dating back to when farmers used tobacco to preserve cheese. Today, it is a traditional dish of the region.
