Yummy ginger fritters dusted with honey and lemon juice, a traditional delight from Ziguinchor.

Ingredients
- 200g of grated ginger
- 100g of cane sugar
- 100g of honey
- 100g of flour
- 2 eggs
- 1 lemon
- Oil for frying
- Granulated sugar for garnish
Method
- Grate the ginger and mix it with the cane sugar and honey in a bowl.
- Add the flour and eggs, mix until you get a compact dough.
- Prepare the lemon juice and make the granulated sugar into a powder.
- Fry the dough in hot oil, initially at low temperature to get a soft texture.
- Once done, fry at high heat for a crispy crust.
- Drain the fried fritters and let them cool for a few minutes.
- Sprinkle the powdered sugar over each frittino, serve with lemon juice.
- Enjoy!
